36-count linen is perfect if you like fine fabrics. You can stitch it with 1 strand of cotton over 2 threads of fabric. You can also stitch with 2 strands of cotton over 2 threads, depending on the finish you prefer, but with a single strand of cotton the embroidery will be lighter. If you want to stitch a miniature, then stitch with a single strand of cotton over 1 thread of fabric.
